- Pre-Heat BBQ.
- Salt salmon generously with salt.
- Whisk together olive oil, lemon pepper and oregano then brush over salmon.
- Let sit for 5-10 minutes then transfer to grill (skin side down).
- Grill for 10-15 minutes with lid closed, checking periodically.
- Once the fish is flaky and breaks apart easily with a fork remove from grill and transfer to serving plate and let rest 5 minutes before serving.

Grilled salmon has always been THE dish I’ve always done well. It’s a simple recipe I learned from my dad (thanks Dad) years ago. For years this was my one go-to recipe whenever I had company for dinner (it’s always better to serve something tried and tested rather than trying a new recipe…and possible disaster :P, when hosting). Now, years later this is still one of my go-to recipes; it’s easy, delicious, and nutritious. And if you’re not a huge salmon fan you can still transfer the recipe over to most fish.
You can use this recipe for salmon fillet or steak, but also transfer it to most grilled or baked fish dishes such as tuna or trout – which is particularly handy living in Vancouver, which has such a fantastic variety of fresh fish!

Step 1 – Salt Your Salmon

Lightly salt your fish with coarse salt. I’ve tried a couple of variations like adding the salt into the oil but the recipe never turns out quite the same, so always salt your fish first. So with your hands just sprinkle a little salt on the fish; no rubbing or brushing necessary yet.
Step 2 – Mix and Brush

While the salt is resting on your fish, whisk together some good quality olive oil, lemon pepper with a dash of oregano, then brush it evenly over the salmon. Cover your fish and let it sit at room temperature while you pre-heat your BBQ.
Step 3 – Grilling Time!

Once your grill is preheated to about 400ºF, place the salmon (skin-side down) onto the grill; if you’ve had the skin removed from your filet, place a piece of tin foil underneath your fish, otherwise it will fall apart once it’s cooked and will make things difficult when you try to remove it from the grill.
If you have the option, opt to keep the skin on. I prefer cooking with the skin on as it holds in a lot of the natural flavours, it’s easier to handle on the grill, and slides right off once it’s cooked (so you won’t be eating it anyway).
Grill your fish for a good 10-15 minutes (if using a larger piece this may take a little longer). You’ll know your fish is ready once it is flaky when you poke it with a fork.
Remove from the grill, let it sit for a couple of minutes, and VOILA you’re done!

Made this the other night and it was a huge hit using fresh oregano rathen than dried, worked out great.

I’ve used this seasoning mix on trout, tuna and halibut, however, cook time might vary depending on the type of fish.
Should I use atlantic or pacific salmon?
