Chardonnay Salmon - Ready to Serve

Chardonnay Salmon

Course: Main Course

Ingredients
  

  • 1 Salmon fillet
  • 1/4 cup Chardonnay
  • 1 Green Onion diced
  • 1/4 cup Parsley minced
  • 1 tbsp Olive Oil
  • 1/2 Lemon
  • Salt & Pepper

Method
 

  1. Pre-heat oven to 350ΒΊF.
  2. Season fish with salt and pepper and let rest.
  3. In a small bowl combine olive oil and lemon juice and brush over fish and let sit for 15 minutes at room temperature.
  4. Top fish with onion and parsley, and wrap fish in foil.
  5. Pour wine into foil over fish and seal edges of foil, making sure to leave enough room between the fish and foil so the air can circulate. Place fish on baking sheet and transfer to the oven and bake for 20 minutes.
  6. Remove from oven, open foil and let fish sit at room temperature for 5 minutes before serving.

One of the best parts about living in British Columbia is the annual salmon run, when adult salmon swim upriver from the ocean to spawn. It’s a really remarkable natural phenomenon that’s amazing to witness, not just watching the fish but also seeing the bald eagles (and grizzlies 😐) gather in large groups to feast.

Because the fish are in abundance many fisherman dock in the local fishing villages to sell salmon directly from their boats. So once a year Romeo and I make our way to the docks to aΒ little fishing village called Steveston (which is used as a filming location for MANY movies and TV shows – most notably it doubled for Storybrooke in the show Once Upon a Time; it’s really fun to visit especially when they’re doing film setup) to stock up on salmon for the year. Romeo and I went a little overboard our first year and as much as we love my go-to grilled salmon recipe we needed to add some diversity in our salmon recipes.

I found a lot of recipes online that suggested grilling the salmon then drizzling it with a white wine sauce, I also found quite a few recipes that suggested steaming your fish topped with fresh herbs, so I decided to combine the two and made salmon filet steamed in chardonnay topped with herbs, the results were fantastic and I’m glad I tried something.Β  This recipe is very easy to make, quick to prepare and healthy. I really hope you enjoy this quick little recipe as much as I do πŸ˜ƒ

Step 1 – Salt your Salmon

Start by lightly salting your fish with some coarse salt. I’ve triedΒ  a couple of variations like adding the salt into the oil but the recipe never turns out quite the same, so I always salt first. Lightly sprinkle the saltΒ onto the fish; no rubbing or brushing necessary, and that’s it πŸ˜€.

Step 2 –Β Season your Salmon

Place your fish, skin-side down, on a large piece of tin foil. You’ll be using foil to steam your fish, so make sure it’s a large enough that’ll you’ll be able to wrap your entire piece with.

Once the fish is on theΒ  foil, whisk your olive oil and lemon juice together in a small bowl until they’re well mixed, then brush the mixtureΒ over the salmon and let it marinade for about 15 minutes.

While your fish is marinating, chop your green onions and parsley then place them on top of your salmon.

Step 3 –Β Steam your Salmon

Once your salmon has marinated for 15 minutes, pour your chardonnay over the fish and herbs, then carefully seal the edges of the foil to form an enclosed packet, making sure to leave room between the top of your fish and the foil enclosure, as you want to make sure the air circulates in the foil (so your fish will steam). Place the fish on a baking sheet and bake in the oven for 20 minutes at 350ΒΊF, then remove form oven, let the fish sit at room temperature for 5 minutes, then serve and ENJOY!
