Method
- Pre-heat oven to 350ºF.
- Season fish with salt and pepper and let rest.
- In a small bowl combine olive oil and lemon juice and brush over fish and let sit for 15 minutes at room temperature.
- Top fish with onion and parsley, and wrap fish in foil.
- Pour wine into foil over fish and seal edges of foil, making sure to leave enough room between the fish and foil so the air can circulate. Place fish on baking sheet and transfer to the oven and bake for 20 minutes.
- Remove from oven, open foil and let fish sit at room temperature for 5 minutes before serving.
