Lemon Chia Pudding - Ready to Serve

Lemon Chia Seed Pudding

Homemade pudding that doesn't come from a box.

Ingredients
  

  • 2.5 cups Cream
  • 3 Eggs beaten at room temperature
  • 1/3 cup White Sugar
  • 2 tbsp Cornstarch
  • 1 tbsp Lemon Zest
  • 1 tbsp Chia Seed
  • 2 tsp Vanilla Extract
  • 1/4 tsp Salt

Method
 

  1. Combine sugar, cornstarch and salt in medium sauce pan on medium/low heat.
  2. Whisk continuously and add a 1/4 cup of cream and continue to whisk until smooth.
  3. Once smooth gradually add remaining cream with the eggs and continue to whisk until small bubble begin to appear around the edge of the sauce pan then lower heat and add and add lemon zest.
  4. Continue to stir with a spatula while scraping the bottom to make sure nothing burns to the bottom for another 3-5 minutes.
  5. Remove from heat and let sit for about 30 second, add both the vanilla and chia seed and stir well.
  6. Place in a medium size bowl or into 4 ramekins and refrigerate for 2 hours.

Remember when you were a kid and your mom made you pudding for desert or you got those little pudding cups for lunch? Weren’t they great?! Personally I loved them and they were always my favourite part of my lunch lol.

I hadn’t had pudding in years and had a craving for it one night, but couldn’t bare the thought of going out and buying one of those little boxed of pudding mix filled with preservatives – so I did a little research to find out how to make pudding from scratch. Turns out it’s pretty easy, and all you need is a couple of ingredients you should already have on hand; and you can personalize the flavour to your liking!

I’ve always loved lemon poppy seed anything but I’d never had lemon poppy seed pudding, sooo.. since I was making my own pudding and wasn’t limited to the options on the shelf I figured “hey why not try creating exactly what I want”! It only took two attempts (don’t worry Romeo and I made sure the beta version didn’t go to waste) and I was able to create lemon “poppy seed” pudding – however, instead of using poppy seeds (which I didn’t have) I used chia seeds, which turned out magnificently, on top of having all the nutritional benefits of chia seed!

If you’re not a fan of lemon poppy seed (or chia seed) but still want to learn how to make your own pudding, continue reading anyway since this post gives you the basic steps on how to make a pudding – and feel free to get creative with the flavors to adjust and create your own custom flavor pudding.

Step 1 – Mix and Stir

Lemon Chia Seed Pudding - Mix and StirCombine sugar, cornstarch and salt in medium sauce pan. Once they’re well mixed turn your burner on medium/low heat. Make sure to stir continuously while it’s heating then add 1/4 cup of cream and continue to whisk until the mixture is a nice smooth texture, then add the rest of the cream.

 

Step 2 – Temper your Eggs

Once your cream has warmed up, ladle out about 1/4 cup and whisk it with eggs. This is called “tempering” your eggs, and is a pretty good trick to prevent your eggs from scrambling when you add them into your pudding mixture.

 

Step 3 – Flavour and Wait

Lemon Chia Seed Pudding - IngredientsAdd tempered eggs into your hot mixture and continue stir on medium heat until small bubbles appear around the edges of the sauce pan. Once you see the bubbles, turn down the heat, add your lemon zest, and stir for another 3-5 minutes making sure to scrape the bottom of the pan to prevent any burning.

After 3-5 minutes remove your pot from the heat and let pudding cool for about a minute, then mix in your vanilla and chia seed to your pudding, transfer to a medium size bowl and refrigerate for at least 2 hours.
