Gluten-Free Shortbread Pie Crust

Method
- Preheat your oven to 350ºF.
- In large mixing bowl combine all ingredients together and mix together until well combined.
- Once well combined roll dough into a ball and place it in the centre of a large 9” pie plate, then press it out and up the sides of the pie plate with your fingers, then place in the oven and bake for 10 -15 minutes, then let cool at room temperature as you prepare your pie filling, or use for later.

As I’ve said in previous posts I’ve always considered myself to be a pretty good baker, however, I can’t make pie crust for my life. Throughout the years, every time I’ve attempted a pie crust it’s been an abysmal failure, they’re either too crumbly, to thick, tasteless, tough and so forth (there’s really no consistency, it’s a different result each time).
Luckily, my romeo makes a pretty decent (and consistent) crust, and we used to have date nights where we’d make pie together – it was awesome and so much fun! But sometimes I just want to surprise him, and totally completely takes away from the surprise when I have to ask him to make the crust 😔. My dilemma was then intensified when we went gluten-free… but I didn’t give up!
It might have a taken a little while, but until quite recently I finaly came up with a pretty fun and tasty solution and made a gluten-free shortbread cookie crust. I got the idea after making a gluten-free cheesecake crust which was very simple and easy to make so I figured why not try using the same recipe for a pie crust.
I basically followed the same steps as I did with the cheesecake bottom, but pressed it into a pie plate instead of a spring form pan. Although, I could have used a roller to roll out the dough (my roller is in pretty bad shape), I pressed it out with my hands to make things even easier.
The crust turn out to be incredible, it was easy to make, it added an amazing rich buttery flavor to the pie!
So far I’ve only used this crust for my Raspberry Lemon Meringue Pie and Blueberry Crumble Pie, but needless to say PIE is back on the menu for us and I’ll definitely keep using it as I bake my way through my pie recipes.

Step 1 – Mix your Ingredients
A couple of hours before starting take your butter out of the fridge and let it soften and reach room temperature. Using butter that’s straight out of the fridge it will be hard and difficult to mix even with a stand mixer and you’ll be forced you to overwork your batter and which will leave you with a pretty tough crust (this is a pretty good rule to remember when making shortbread cookies as well).
If you forget to take out your butter out don’t rush and try to use melted belted instead. Although melted butter will easily incorporate with the other ingredients, it will toughen your crust – and who wants tough and hard pie crust?
So remember for best results, leave your butter out overnight and/or at least a couple hours before baking to let it get soft to get that melt in your mouth crust.
All that being said, in large bowl combine your gluten-free flour, sugar, salt, baking powder and room temperature butter and mix until all the ingredients are well combined, which shouldn’t take longer than a minute
Step 2 – Press out your Dough
Once all of your ingredients are well combined, roll your dough into a ball and place it in the centre of a 9” pie plate, then using your figures press the dough out and up the sides of the dish. If the dough is a little uneven and has a couple of finger prints don’t worry, just dip a spoon in lukewarm water to smoothen it out.
As you can see from the pics below my pie crust still looked a little “swoopy” on the bottom, but that’s where the filling will go later so don’t worry if it’s not the prettiest on the bottom.
Step 3 – Bake your Crust
Once your crust is pressed out evenly pre-bake your crust for about 10-15 minutes at 350ºF. If you want a lighter then crust bake for about 10 minutes, and 15 for something a little more golden, but if you notice the crust starting to burn remove it right away!
Either way after 10-15 minutes remove the crust from the oven and let it sit at room temperature while you make the rest of your pie, or set it aside to use a little later!

I have never even tried making pastry — it intimidates me. Now, this sounds like something I could attempt. I live on the west coast where berries are going to start being abundant– there maybe a bumbleberry pie in my future. Blessings
If you’ve never made pastry don’t worry, this recipe is super easy! I live on the west coast as well and can’t wait for berry seasons, so many different pie options to choose from! I think I’m going to have to try making a bumble-berry pie now because that sounds delicious!

I love making pie crust. You are right it was intimidating at first but it is quite a simple process as long as you get used to it . I also love the fact that you made it gluten free .

This is great! I’ve been gluten-free for 7 years now and haven’t found a shortbread recipe I love or that doesn’t completely crumble. Can’t wait to give it a shot!
