Method
- Pre-heat oven to 350ºF.
- Add water and spinach to a medium size sauce pan and steam spinach until all the leaves have wilted and cooked. Drain water from pan and place spinach in a colander lined with cheesecloth and wring out any excess water then set aside.
- In a medium size bowl whip eggs, then mix in green onions, cottage cheese, gouda with a little salt. Once everything is combined, mix in spinach and pour mixture into a 9” pie plate lined with parchment paper and bake in over for 45 minutes, until the centre is set and no longer jiggles.
- Remove from oven and let quiche sit at room temperature for about 10 minutes before serving.
