Method
- Remove roast from oven 1-2 hours before cooking and let sit at room temperature.
- Pre-heat oven to 475ºF.
- Seasons roast with salt, pepper and garlic.
- Place roast fat side up in roasting pan and roast for 25 minutes.
- Turn off the heat in the oven and let roast continue to slow cook in the oven for 2 hours. Do not open the oven door.
- After 2 hours remove the roast from the oven and let rest for 15 minutes before serving.
