Homemade Blueberry Mini Muffins

- Combine all dry ingredients in a large mixing bowl, then add blueberries.
- In a separate bowl, combine cream, butter, egg and lemon zest. Once combined add wet ingredients into dry ingredients and stir until everything is lightly combined.
- Pour into muffins tins and bake at 375ยบF for 20 minutes.
- Remove muffins from oven and brush a light layer of butter on top of muffins and sprinkle with a pinch of sugar.

There’s something so incredibly satisfying about a freshly madeย blueberry muffin, itโs a classic for a reason.ย
Whenever Iโm having company over (non dinner party occasions) I always like to whip up a batch of homemade blueberry muffins, not only are they a fun little treat that pairs perfectly with coffee or tea, but theyโre also easy to whip up and they donโt leave you with a lot of cleanup – and oh yeah,ย they make your home smell AMAZING – who doesnโt like being welcomed with the smell of fresh baking.
If youโre used to making blueberry muffins that come from a muffin mix, this muffin recipe is almost as easy, and it uses real blueberries (as opposed to being blueberry flavoured). If you arenโt in the mood for blueberries and/or don’t have any on hand no worries, this recipe is very versatile and isย a great base for most muffins, so go ahead and have fun with the berries and flavors (Iโve used strawberries, raspberries and even use this recipe as a base for lemon poppy seed).

Step 1 –ย Mix your Ingredients
When I first started baking I used to dump everything inย one in a large bowl, mix, pour and bake. For the most part everything turned out fine, but it was never great. However, once I started taking a of couple extra minutes and started mixing the dry and wet ingredients seperatly first my baking got a heck of a lot better. The reason you want to mix your dry ingredients separate is to make sure they get evenly distributed in your batter!
A little bit goes a long way here so use one extra bowl and take a couple extra minutes and mix your dry ingredients (with the blueberries) in one bowl, and your wet ingredients in another to get the best results for your muffins!
Step 2 –ย Combine your Ingredients
After youโve mixed your dry and wet ingredients separately, combine the two mixtures and mix them together with a wooden spoon.Because the blueberries are so delicate (even when frozen) itโs important to mix with a spoon and not use your mixer (if you have one). Iโve used my mixer more than a couple of times making this recipe and it totally destroyed the blueberries, so I ended up with blue tinted muffins without any juicy blueberry bursts.
Mix your muffins until all the ingredients are well combined and portion the batter out into lined muffin tins!
Step 3 –ย Bake and Serve
Once all your batter has been poured into your muffin tins, bake the muffins in your pre-heated oven for 20 minutes and leave the oven door closed throughout the entire baking time so that the oven maintains an even temperature throughout the entire bake time.
Check on the muffins after 20 minutes, if the tops are golden brown and fluffy remove them from the oven (you can also insert a toothpick, and if it comes out clean then you know the muffins are ready).
Let the muffins rest at room temperature away from the oven and using a pastry brush brush a thin layer of melted butter on the muffins tops, then grate a little bit of fresh lemon zest with a pinch of sugar on top – this adds a really nice little zest, then serve and enjoy!

Ooh, this looks so yummy! I’ve never used half & half in baking, so I’m curious to see what that does to the batter. I go through packs of blueberries like a fiend, but haven’t baked too much with them… this recipe is definitely making me want to try!
The half & half gives the muffins a really rich flavor, I’ve used milk but they just didn’t turn out the same! Happy baking!

Iโve never used half and half milk for anything. Is it really much healthier than 2% or whole milk? These look delish! I donโt bake but Iโm about to start trying new things! And Iโm very interested in trying this!

I used to eat muffins all the time before I became extremely lactose-intolerant. I wonder if this recipe would work with vegan subs in place — do you think? Either way — looks like a yummy recipe!

I’ve never tried making it with vegan substitues but it would definitely be worth a try. Personally, I would start by trying the recipe out with coconut milk and coconut oil, and use little less oil that I would for butter. I’d love to know if you do try these out using vegan subsitutues, know it turned out and what you used!
