Homemade Crustless Gluten-Free Spinach Quiche- Ready to Serve

Crustless Gluten-Free Spinach Quiche

Servings: 6

Ingredients
  

  • 4 cups Raw Spinach or one pack of frozen or one pack of frozen
  • 1/4 cup Water
  • 4 Large Eggs
  • 3 Green Onions diced
  • 2 cups Gouda
  • 2 cups Cottage Cheese
  • Salt & Pepper to taste

Method
 

  1. Pre-heat oven to 350ºF.
  2. Add water and spinach to a medium size sauce pan and steam spinach until all the leaves have wilted and cooked. Drain water from  pan and place spinach in a colander lined with cheesecloth and wring out any excess water then set aside.
  3. In a medium size bowl whip eggs, then mix in green onions, cottage cheese, gouda with a little salt. Once everything is combined, mix in spinach and pour mixture into a 9” pie plate lined with parchment paper and bake in over for 45 minutes, until the centre is set and no longer jiggles.
  4. Remove from oven and let quiche sit at room temperature for about 10 minutes before serving.

One of the easiest dishes I like to whip up is a simple spinach quiche. Quiche is a delightful little breakfast or lunchtime treat that I always get into the mood for whenever spring comes around.  Once you know the basics of making a quiche  it can as creative or  as simple you like by adding additional veggies, cheeses and seasoning or just keeping it to just egg and cheese.

Growing up, quiche was reserved for “special occasions”, when my grandmother would serve up array of mini-quiches as appetizers for holiday meals. However, once I started learning how to cook, I got the urge to learn how to make them myself. So I spent the better part of a week making about a dozen quiches (almost 2 a night… I went overboard) trying out different ingredients and flavors, then freezing them so Romeo and I could pull them out to have for breakfast or lunch.

Although I loved making all those quiches, making the crust was kind of a drag and a labour-intensive process that I didn’t enjoy, since I had to make the crust, roll it out, then get it into the pie plate. So when spring rolled around the next year and I had a craving for quiche again, I asked myself why I needed to make a crust at all? I love quiche for it’s eggy, cheesy goodness, so I decided to ditch the crust altogether and have been doing so ever since!

Step 1 – Prep your Spinach

Wash your spinach thoroughly with cold water, making sure to discard any leaf that is slimy or wilted. If you’re using frozen spinach, you can skip this since the spinach is already washed, and steam it once the water’s ready.

After you’ve washed the spinach, heat an inch of water in a medium size pot. Once the water reaches a simmer, add your spinach to the pot and let it steam for about 2-3 minutes stirring occasionally. When all the spinach leaves are wilted drain the water from the pot and transfer spinach to a small bowl lined with cheesecloth. Let the spinach cool for about 5 minutes, then wring out any excess water from the spinach. Try to wring out as much water as you can but don’t worry if it’s still a little watery – your quiche will be fine.

This recipe works using either fresh or frozen spinach, but I prefer using fresh since I prefer the taste and love to support my local BC growers. Alternatively, if you’re using fresh spinach you can choose not to pre-cook your spinach and add it to the quiche raw, just know that the quiche will come out a little dried and less moist – but still delicious; so have fun with the different options.

Step 2 – Whip your Eggs and Cheese

In a large bowl, beat your eggs until they are nice and frothy, then mix in your cottage cheese, cheese, green onions, and spinach and continue to mix until everything is well combined, then pour the mix into a 9” pie plate lined with parchment paper.

If you don’t have parchment paper make sure to grease/butter your dish, or you’ll have a really hard time getting it out. Parchment paper really takes away all the hassle and worry so you can just pop it out of the pan and slice out some elegant pieces.

Although I like to use a pie plate, you can also use an 8” x 8” pyrex dish – just bake it for an extra 5 minutes since it will be a little thicker.

Step 3 – Bake and Serve

Transfer the quiche into your pre-heated oven and let it bake for 45 minutes and try to avoid opening and closing the oven so that the oven temperature remains the same throughout the bake time.

Once done, remove the quiche from the oven, if it’s still jiggly and wet looking in the middle keep it in for another few minutes (but it should be done at this point). Once out of the oven, let the quiche sit at room temperature for at least 10 minutes before serving and enjoy!
