Slow Cooker Chicken Thighs

- Place all vegetables on bottom of slow cooker then place chicken on top of veggies.
- Combine wine and chicken stock then pour over meat and veggies, add a little salt and pepper as desired then cover and cook on low for 8 hours or high for 4 hours.

Slow cooker season is upon us! I don’t know about you, but when I get home from work it’s already dark out and I’m not in the mood to cook. It’s times like these that I am sooo grateful for my slow cooker(s)! Like most people after the holidays I’m tiered, ready to get back to my regular routine and eat a little healthier, and slow cooking is my secret weapon to help get me through those finale winter months.
Tonight I decided to make one of my go-to slow cooker recipes which I recommend to any New-Bee since it’s super easy to make, nutritious, and incredibly delicious. It’s also a great way to use up any of the extra veggies you have kicking around in your fridge which is a great way to avoid waste and stretch your dollar a littler further (which is particularly handy after the holidays). Although this meal takes all day to cook, it only takes 10 minutes to prep so you can either prep it before you head out in the morning or prep it the night before so all you need to do is hit the “ON” butter before you leave.
Step 1 – Chicken Prep

Take your chicken out of the fridge and generously season it with some salt, pepper and paprika set it aside and that’s it. When slow cooking I prefer using chicken thighs with the bone and skin-on as the fat makes the chicken juicy,moist and very flavourful. Chicken thighs are one of my favorite things to slow cook, not only are they less expensive than breasts, but also more flavourful and moist. Although there’s nothing stopping you from using chicken breasts for this recipe remember that you won’t get the same juicy result as you would with thighs.
All that being said once you’ve done that set it aside while you prep your veggies.
Step 2 – Veggie Prep

Start by cleaning and prepping your veggies, although I’m using carrots, celery, red peppers, onions and potatoes, feel free to add whatever vegetables you have on hand like broccoli, cauliflower, cabbage or even throw in some apples if you have them on hand. Go ahead and be as creative as you want.
Regardless of the veggies you use make sure you chop them coarsely. For best results I like to cut my veggies into quarters so they don’t cook too quickly and become mushy. This is a general rule of thumb when cooking veggies, the smaller they are chopped, the quicker they will cook.
Once everything’s top place them in the slow cooker and sprinkle in some fresh thyme.
Step 3 – Into the Slow Cooker

Now that everything is prepped, place your chicken on top of your veggies in your slow cooker, then pour the wine and stock over the chicken and top with a little salt and pepper. Cover and cook on low for 8 hours or on high for 4 hours and enjoy when you get home later!

Yum this recipe looks so good! I always tend to shy away from chicken thighs and go for chicken breasts as I’m never sure how to cook them. But I have a slow cooker and now this recipe so I’ll give it a go – thanks!
I made the switch from chicken breasts to thighs a couple years back and haven’t looked back since! There are a couple of other recipes on the site for thighs if you want a couple more ideas. In the meantime have a great time slow cooking these :)!
I love slow cookers. I had a wonderful one that I used all the time in the United States. Here in Spain, they’re less common. I want to find a good one so I can have lunch ready when I return home from teaching.
I have 2 slow cookers made by “Crock Pot” and have been very happy with them, I have another made by a popular American restaurant chain and it’s such poor quality I won’t even give it away.
Crock pot also makes a small individual size one that I keep at my desk which is PERFECT for warming up lunches 🙂 Hope you enjoy the recipe!
My husband is our chef and cook at home. This looks absolutely delicious and since it’s easy to make, delicious and nutricious, maybe I could have a go and surprise my hubby?:) The problem is, we don;t use the slow cooker so I would need to get one, first. Since I try to eat a lot of veggies, I am glad you mentioned them here, too!
Being vegetarian not able to say much on this recipe. But I am sure my other friends who are not veg will certainly relish.

I’m vegan, so I’ll skip the chicken and swap the stock to veggie stock. I love using a slow cooker for cooking veggies and I love the ones you chose!

Microwaved food has always been my go-to for food as I’m currently still staying with my parents and sharing the kitchen. But when I have my own house, I’m definitely going to try out all these!
Aren’t slow cooker meals life saving? They’re convenient and tasty. I also prefer to use chicken thighs in the slow cooker since it tends to dry out chicken breasts. I’ll definitely be trying out your recipe!
